Spooky Good Caramel Apple Strudel Cheesecake

1 package iced oatmeal cookies, finely crushed

1/4  tsp ground cinnamon 

4 Tbs. butter, melted


Streusel Topping

1/2 cup flour

1/4 cup quick cooking oats

1/4 cup 2 Tbs. brown sugar

1/4 tsp ground cinnamon

1/8 tsp salt

1/4 cup butter, partially melted


Cheesecake Filling

16 ounces cream cheese, softened

2/3 cup sugar

2 eggs

1 tsp vanilla extract

1/2 tsp cinnamon

1 lb apples, peeled, cored and finely chopped (I used Granny Smith, Honeycrisp, and Jonagold)

2 tsp butter

1 Payday candy bar finely chopped



Easy caramel sauce (recipe below)*


For Crust

1.       Preheat oven to 325 F degrees.

2.       In a mixing bowl, combine melted butter, cookie crumbs and cinnamon.

3.       Press into bottom of 9in springform pan.

4.       Bake 5 minutes and cool.


For strudel:

1.       In bowl mix flour, oats, brown sugar, cinnamon and salt. Add to melted butter. Stir until clumps form and place in fridge while preparing the filling.


For filling:

1.       Beat cream cheese with sugar until smooth

2.       Add eggs one at a time and beat until smooth

3.       Add vanilla, mix, and set aside.


1.       Melt 2 tsp. butter in pan. Add chopped apples and cinnamon.

2.       Saute apples until they are slightly soft (about 2 mins)


1.       Pour cheesecake batter evenly over crust.

2.       Spread apples on top.

3.       Sprinkle on strudel topping and Payday candy

4.       Bake about 35 mins.

5.       Let cool 15 minutes

6.       Chill  in fridge 6 hours or overnight

7.       Top with caramel sauce

**Make it festive by adding Halloween decorations.**


*Easy Caramel Sauce

For a quick caramel sauce melt 1lb soft caramel candy pieces in a sauce pan along with 2 Tbs. of milk, water, or cream. Stir until fully melted and smooth.
